Crumb Soft is developed to improve the softness and freshness of all types of bread and rolls. Crumb Soft retards the staling process and results in softer products with a finer crumb structure. Crumb Soft replaces the fat content in your bread, using a low dosage of 1/5 to 1/4 of needed fat content.

When I talk about a loaf with an open crumb, I mean a loaf that’s light in hand and evenly (and appropriately) open in the interior — one whose light texture contributes to the overall eating experience.

Why do you want an open crumb?
Open crumb bread has a much higher moisture content than breads with a closed crumb, and it also tends to undergo long fermentation periods. Many breads made with wild yeasts or old dough starters have an open crumb, because they do best when allowed to ferment for an extended period of time.
What happens if you Underproof bread?
